oUR pRACTICES
Our philosophy is simple: let nature lead. We raise our animals with minimal intervention, avoiding heavy machinery, antibiotics, and hormones while allowing them to graze freely in open pastures. Farming Practices Passed on for Generations.
We raise our animals using sustainable, regenerative farming practices. Our livestock are pasture-raised, rotationally grazed, and never given routine antibiotics or hormones. This results in healthier animals, better-tasting meat, and a more sustainable food system.
No, we never use growth hormones, and antibiotics are only administered if absolutely necessary for the well-being of an animal (which is rare). Any treated animal is removed from our direct-to-consumer program.
We sell our meats in wholesale shares (quarter, half, and whole) or curated bundles. To reserve a share, you place a non-refundable deposit. Once the animal is processed, you pay the remaining balance based on the final hanging weight. You are responsible for paying the butcher directly for harvest/slaughter and cut-and-wrap fees.
The exact cuts vary depending on the animal and the butcher’s processing, but a typical share includes: Beef Quarter (Approx. 100-125 lbs finished weight) Ground beef, steaks (ribeye, sirloin, NY strip, etc.), roasts (chuck, rump, etc.), brisket, short ribs, stew meat, soup bones, and organ meats (optional). Lamb Half (Approx. 20-30 lbs finished weight) Chops, leg of lamb, shoulder roasts, ground lamb, shanks, ribs, and soup bones. Whole Pastured Chicken (Approx. 4-6 lbs each) Sold as whole birds or cut-up options, including breasts, thighs, wings, drumsticks, and carcasses for stock.
Prices are based on hanging weight, which is the weight of the animal after slaughter but before butchering. Your final take-home weight is approximately 60-65% of the hanging weight.
Charging by hanging weight ensures transparency in pricing and allows you to customize your cuts. It’s the industry standard and ensures fair pricing based on the size of the animal before processing.
You have 3 options: Pick up directly from the butcher – Once your order is ready, you can pick it up at the processor’s location.
